Apple & Peach Cobbler

Ingredients

2 peaches, peeled and sliced into half moons

2 apples, peeled, cored and sliced into half moons

1 teaspoon vanilla extract

½ lemon juiced

1 ½ tablespoons maple syrup

1/4 cup raisins

1 teaspoon arrowroot powder (can sub corn starch)

For The Topping

1/2 cup rolled oats

1/2 cup oat flour

2½ tablespoons coconut oil, melted ( can sub butter)

2 tablespoons coconut sugar

1 tablespoon ground flax meal

½ teaspoon cinnamon

½ teaspoon kosher salt

Method

1.  Preheat oven to 350 degrees F and grease an 8x8 baking dish with non-stick cooking spray. Set aside.

2. To make the filling, place sliced apples, peaches, vanilla extract, maple syrup, raisins, lemon juice and arrowroot powder in a bowl and toss to evenly combine. Let it stand for 10 minutes.

3. To make the topping, combine rolled oats, oat flour, coconut sugar, ground flax meal, cinnamon, and salt. Mix to combine. Slowly pour in coconut oil (or butter) and mix until mixtures becomes a little crumbly.

4. Place the apple & peach mixture in prepared pan and sprinkle evenly with topping.

5. Bake the crumble without tin foil for 30 minutes then cover with tin foil for the remaining 10 minutes.

6. Remove from oven and cool 10 minutes on wire rack. Serve warm with your favorite cold topping!
