Coffee Cake Banana Bread

Ingredients                        

3 small, extra ripe bananas (or 2 large)

2 eggs ( can sub flax egg)

¼ cup coconut oil, melted

¼ cup dairy free milk of choice

1/3 cup maple syrup

1 shot espresso (can sub 1 tablespoon ground coffee)

2 teaspoon vanilla extract

1 ¾ cup oat flour

1/3 cup coconut flour

2 teaspoon baking powder

1 teaspoon baking soda

½ cup dark chocolate chips

Pinch kosher salt

Method

1. Preheat oven to 350 degrees F and grease a large loaf tin with coconut oil and line with parchment paper.

2. In a large bowl (using a hand mixer) mix together the banana, eggs, coconut oil, maple syrup, vanilla extract, milk and espresso to a bowl until well combined.

3. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix; it’s totally fine if there are some lumps of banana, etc. Fold in ½ cup dark chocolate chips.

4. Add banana bread batter into the prepared pan. Bake for 40-50 minutes or until a tester inserted into the middle comes out clean or with just a few crumbs attached. Allow bread to cool in the pan for 5-10 minutes, then remove and transfer to a wire rack to finish cooling.
