Healthier Rice Crispy Bars

Ingredients

4 cups rice crisp cereal

1 tablespoon vanilla extract

2 tablespoons coconut oil, melted

1/3 cup cashew butter

1/4 cup maple syrup

Pinch of salt

Method

1. Line a 9-inch square baking dish with parchment paper. Set aside.

2. Place a medium pot over low heat and add in cashew butter, coconut oil, maple syrup, salt and vanilla extract. Mix until smooth and well combined, about 1 minute.

3. Remove from heat & add in the crisp rice cereal; stir until combined and cereal is completely coated. Pour into prepared pan, and use a spatula to flatten the top so it is even.

4. Allow to set, about 1 hour. Cut and enjoy!
