Chocolate Fig Bites

Ingredients

16 dried figs, stems removed

1 cup chopped walnuts

1/3 cup dried cherries (optional)

½ cup dark chocolate chips 

½ cup unsweetened shredded coconut

2 tablespoons maple syrup

1 teaspoon vanilla extract

Cinnamon


Method

1. In a food processor combine dried figs, walnuts, cinnamon, dark chocolate chips and ½ cup coconut

2. Turn the food processor on and pulse until all ingredients are combined.

3. Next, slowly add in the maple syrup and vanilla and pulse until a paste forms

5. Scoop out the mixture into a bowl and refrigerate for 10 minutes before rolling into balls.

6. Once chilled, dab a little cold water onto the palm of your hands and roll the mixture into medium sized balls

7.  With the remaining coconut, place into a shallow dish and roll each ball until coated

8. Freeze and enjoy!
