Apple Bourbon Crumble

Ingredients                        

4 large granny smith apples

1 cup dried cranberries (optional)

½ cup maple sugar (sub coconut sugar)

1 teaspoon cinnamon

Juice from 1 lemon

1 ½ tablespoon bourbon

½ cup gluten free rolled oats

1/3 cup almond flour (sub oat flour)

2 tablespoons butter, room temperature

Method

1. Preheat oven to 375 degrees F and grease an oven proof baking dish with coconut oil.

2. Peel and core the apples, then quarter and cut into even sized chunks.

3. Put the diced apples into a bowl and mix in cranberries, ¼ cup maple sugar, cinnamon, lemon juice and bourbon. Tip into greased baking dish and set aside

4. Place the flour and oats into a bowl and mix well. Using your fingertips, mix in the butter until it resembles a crumble-like texture. Add in the remaining maple sugar and mix through.

5. Now cover the fruit with the oat crumble and bake for 20-25 minutes ( or until golden brown and cooked through).

** Not only does this taste amazing right out of the oven, but it tastes even better with a bit of cream poured over top….or ice cream if you wish**
