Baby Banana Nuggets

Ingredients
2 bananas, chopped into thick rounds
1 cup gluten free flour (I like oat)
1½ teaspoon baking powder
1 teaspoon cinnamon
1 tablespoon flax meal (optional)
¼ teaspoon salt
1 tablespoon butter, melted
1 cup milk of choice ( I used oat)
1 teaspoon vanilla extract
1 tablespoon honey
Method
1. In a small bowl, whisk all your wet ingredients together until well combined.
2. Add in dry ingredients and mix until no clumps remain. The batter will be thick and that’s ok!
3. Dredge each piece of banana into the pancake mixture and fry in a skillet on medium-low heat for 2 minutes on each side.
4. Serve with your fav toppings and enjoy!
