Chocolate Protein Granola

Ingredients
1 ½ cup oats
3 tablespoons vegan chocolate protein powder
2 tablespoons flax meal
1/3 cup chopped dates
1/4 cup raw cacao nibs
1/4 cup unsweetened shredded coconut
1 tablespoons coconut oil, melted
3 tablespoons maple syrup
Pinch of salt
Method
1. Preheat oven to 350 degrees F and line a baking tray with parchment paper.
2. Using a small bowl, mix together all your dry ingredients. Once combined, pour in coconut oil, maple syrup and thoroughly mix until evenly coated. I personally like using my hands for this.
3. Transfer to baking sheet and bake for 20 minutes ( flipping halfway through).
4. Allow to cool and serve as is, over yogurt or with a little milk.
5. Store in an airtight container.
