Ultimate Iceberg Salad

Ingredients

1 head iceberg lettuce, chopped

1 cucumber, peeled & chopped

1 pint baby tomatoes, halved 

4 oz goat cheese, crumbled 

Homemade croutons

Dressing

1/2 cup olive oil

5 tablespoon white wine vinegar 

1 tablespoon mayonnaise

1 tablespoon honey

1 tablespoon dijon mustard

1 teaspoon dried oregano

Salt

Pepper

Method

1. In a small bowl, whisk oil, vinegar, mayonnaise, honey, oregano and dijon mustard. Season w/ salt & pepper

2. Using a large salad bowl, toss in lettuce, tomatoes, cheese, cucumber, tomatoes and a little salt. Drizzle with ½ the dressing and top with a little cracked pepper.


Recipe Notes

  • homemade croutons are easier than you think to make. Take some old bread, cut it into large chunks and toss with olive oil, dried herbs, salt and pepper. You can either pan dry these or stick them in the oven for 10-15 minutes.
