ASIAN CHICKEN LETTUCE WRAPS

Ingredients
2 chicken breasts, cut into cubes
3 tablespoons sesame oil
1 tablespoon freshly grated ginger
½ tablespoon dijon mustard
1/3 cup coconut aminos
1 tablespoon soy sauce
½ tablespoon honey
Juice from ½ lime
Salt
For The Wraps
1 head butter lettuce
1 cup shredded cabbage
1 pepper thinly sliced
2 carrots shaved
2 sprig onions, chopped
½ avocado diced
Method
1. In a small bowl prepare your sauce by combining 2 tbsp sesame oil, ginger, dijon, coconut aminos, soy sauce, honey, salt, pepper and set as aside. If the sauce seems too thick, add a few drops of water to help thin it out.
2. In a separate bowl, toss cabbage, peppers & carrot slaw with lime juice, salt, pepper and 1 tbsp sesame oil. Set aside.
3. Next, heat a non-stick skillet over medium-high heat and sauté diced chicken for 3 minutes. Pour in sesame sauce and cook for 5-7 minutes or until chicken is fully cooked through. Recommend covering it with a lid.
4. Now for the fun part - assembly time. Add chicken to the base of the lettuce wraps and top with cabbage slaw a little avocado and enjoy!
