Beef Mince

Ingredients

2 lbs grass fed extra lean. groundbeef

1 diced red bell pepper

1 diced yellow bell pepper

1 chopped shallot

1 tablespoon dijon mustard

1 tablespoon tomato paste

1 teaspoon dried chili flakes

Salt & Pepper

1/4 cup chicken stock ( or as needed)

Method

1. In a large nonstick pan (over a medium high heat) crumble in the beef. Once the meat starts to brown add the bell pepper, shallot, salt and pepper. Continue cooking, stirring occasionally, until the veggies start to soften – this should take around 5 to 10 minutes. Use the chicken stock when needed or if the beef starts to stick to the bottom of the pan

2. Once the veggies are cooked through add in the dried chilli flakes, tomato paste and dijon mustard. Cook until warmed through. About 2 minutes

3. Serve however you like. I like to use the mince for taco bowls, wraps or even better in pasta!
