Lemon Poached Chicken

Ingredients

4 large chicken breasts

1 large onion, roughly chopped

2 cloves garlic, crushed

1 lemon, cut in half

Big hanfdful fresh thyme & rosemary

4-6 cups water (or chicken stock)

Salt

Pepper

Method

1. Place the chicken, water, garlic, onions, lemon, herbs, salt & pepper in a large dutch oven or deep pot. (you want to sure the chicken is completely covered with liquid)

2. Place over medium heat, bring to a light simmer and cook for 15 minutes.

3. Remove from the heat, cover with a lid and allow to stand for 1 hour.

4. Remove the chicken from the broth and shred with two forks.

5. Store in fridge for up to 5 days and use in wraps for lunch, in salads or even on rice cakes with a little mayonnaise! The options are endless and the work has been done!
