Lightened Caesar Salad

Ingredients

1 tablespoon extra virgin olive oil

1 1/2 tsp dijon mustard

Juice from 2 lemons

1/2 cup low fat cottage cheese

1 clove garlic

1 shallot, roughly chopped

1 small garlic cloves

2-3 tablespoon water

1/4 cup grated parmesan cheese (optional)

Salt & pepper

Method

1. Using a high speed blender of choice add in oil, water, mustard, lemon juice, cottage cheese, garlic, shallot, salt and pepper and pulse until creamy. If the dressing is too thick, add more water until the preferred consistency

2. If you want to spice it up, add in the 1/4 cup grated parmesan cheese for that extra goodness
